- Purple onion
- Chicken or vegetable stock
Cut the onion into julienne strips, add enough lemon to completely drown the onion in the juice.
Add pepper and salt to taste.
Leave it for at least a couple of hours to rest.
Cook the chicken with a little chicken or vegetable stock and/or salt to season to taste.
Bring the Mole of your choice to a boil in a saucepan with a little water and a tablespoon of chicken stock to taste.
Once boiled, let it rest and heat the tortillas, add the shredded chicken, make it into taquitos and bathe them all over with Mole La Villana.
Serve on a plate and top with a little onion, enjoy your Chicken Enmoladas with Mole La Villana.
